Petite Dessert: Vanilla Cheesecake Shots

Hi!  Lisa from Stop and Smell the Chocolates here.  I’m happy to be a part of Thrifty Kitchen here at Pennies and Blessings!  I thought it would only be right to start off by offering up a yummy dessert recipe {my favorite food group}. :)

Petite desserts have become very popular lately {even Starbucks has started offering them}.  They cost less, contain less calories and well…they’re cute!  I found this recipe idea through Kraft and then made some changes to make it even more yummy!  I found 1 oz plastic cups at Smart ‘N Final, but you could also use that eclectic collection of shot glasses stuck in the back of your cupboard!

Vanilla Cheesecake Shots

8 oz tub cream cheese spread (not solid cream cheese block, but not whipped cream cheese either!)
3/4 cup half and half
1/3 cup sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
Crushed Nilla wafers, graham crackers, or other cookies for garnish

Blend all ingredients except cookie crumbs in blender until smooth.  Serve immediately in 1 oz. plastic cups or glasses.  Garnish with cookie crumbs.  Makes approximately 16 servings.

Variations:  Try different flavors of extracts or add chocolate syrup.  Substitute 2 tablespoons liqueur (Kahlua, amaretto, etc.) for vanilla extract and lemon juice and increase sugar to 1/2 cup.

I think these would be lovely for an Easter brunch or a Spring party!  Or how about serving them alongside a decadent piece of flourless chocolate cake?  Or maybe let guests pour them over a simple slice of yellow cake or a bowl of fruit.  You could even serve it in espresso cups with espresso spoons and call it “Cheesecake Soup!”  So many fun possibilities!

    These looks great I can’t wait to try them. As I said on Lisa’s blog looks like you forgot or could add a dollop of Nutella on top.. I know it says vanilla but even dieters need a tad of chocolate sometime and we dont always want 90 percent dark either.

    Wow! I am on a specially prescribed diet by my physician, so I seldom ever check out the dessert recipes anymore. But, if I switched out the sugar to Splenda, then I could have this delish dish! Thank you so much!
